Sappington Farmers’ Market — Microgreens

Microgreens are a high density, nutrient packed green. Harvested from the seeds of vegetables, herbs and other plants. Surprisingly they have an intense flavor for their size. Microgreens are not the same as sprouts, which is simply a germinated seed. With microgreens you are getting a highly functional food with higher levels of concentrated compounds of vitamins and minerals.

Nutritional facts of a few selected vegetable varieties grown locally as microgreens by Suncrest Farms and sold at Sappington Farmers' Market:

KALE - A leafy green vegetable, high in vitamins A, C, K and Folate. Mineral rich in calcium, magnesium, phosphorus and potassium.

BROCCOLI - A health hero, packed with many vitamins and minerals: A, C, K, folate, choline, calcium, magnesium, phosphate, potassium and selenium.

ARUGULA - A leafy green vegetable with a spicy pungent flavor. High in vitamin A and potassium. Can be used in salads or to flavor oils.

DAIKON RADISH - A Japanese vegetable with a spicy taste. Low in calories, rich in vitamin C and contains active enzymes that aid in digestion.

BASIL - A popular herb with lots of flavor and fragrance. Full of flavinoids for cell protection and essential oils that provide anti-inflammatory effects. Other nutrients found in basil are vitamin C, potassium, iron and calcium.
